Traditional lasagna is incredible, but between boiling the noodles, making the sauce, layering everything, and waiting on the oven, it's a whole production.

The hardest part of regular lasagna is getting the noodles cooked right without the sauce drying out. The magic of the slow cooker is steady, even heat in a sealed environment.
When you put the noodles in uncooked, they slowly absorb the juices from the tomatoes and meat over the course of a few hours. You end up with perfectly tender noodles and a dish where every flavor has had time to meld together. Plus, you skip the whole step of boiling pasta.

Heat a large skillet over medium heat. Toss in the diced onion and cook for a few minutes until it softens. Add the ground beef and brown it all the way through. Drain the grease if there's a lot. Stir in the garlic, both cans of diced tomatoes with all their juice, and the tomato paste. Add the oregano, half the basil, and half the parsley. Season with salt and pepper, give it a good stir, and kill the heat. Don't bother reducing the sauce. You need that liquid to cook the noodles.

In a large bowl, combine the ricotta, grated Parmesan, and grated Romano. Add the 2 eggs, the rest of the fresh basil and parsley, plus a pinch of salt and pepper. Stir until it's smooth and creamy.

Spray the inside of your slow cooker with nonstick cooking spray. Spread about a quarter of the meat sauce across the bottom. Lay down a layer of uncooked lasagna noodles, breaking the edges to fit the shape of your pot. Dollop spoonfuls of the ricotta mixture on top and spread them out gently. Cover with a generous layer of shredded mozzarella. Repeat the layers (sauce, noodles, ricotta, mozzarella) two more times. Finish with one last layer of meat sauce and a thick blanket of mozzarella on top.
