Country bread is a type of artisanal bread typical of many rural areas in Spain. It is characterized by its crunchy crust, dense yet soft crumb, and a strong, real bread flavor, without additives or preservatives. It's perfect for toast, sandwiches, or dipping in soups and stews.
On top of the Thermomix cup, we put a bowl and press the 'scale' button, then add 100 g of water, 10 g of yeast, and 100 g of pastry flour.
We mix it well with a spoon, cover it with plastic wrap, and let it rest in the fridge overnight.
In the Thermomix bowl, we put the water and the yeast. Heat for 1 minute at 37°C, speed 2.
We add the strong flour and the salt. We mix for 10 seconds at speed 4.
We incorporate the preferment and knead for 4 minutes using Dough mode.
We pour the dough into a large bowl greased with oil (it's a soft dough) and keep it in a draft-free place (for example, inside the microwave) or cover it with plastic wrap. We let it rest until it doubles in size (between 40 and 50 minutes depending on the room temperature).
We dump the dough onto a floured work surface and knead it lightly to take out the air. We place the dough on a baking tray lined with parchment paper and shape it however we want.
We make some cuts on the dough and sprinkle with flour. We let it rest in a draft-free place (for example, inside the turned-off oven) until it doubles in size (30-40 min depending on room temperature)
We preheat to 250°C / 482°F.
We place a tray with a little water on the lower part of the oven and put the rack in the middle. We put the tray with the bread on the rack and bake for 10 minutes at 250º. Then, we lower the temperature to 200º and keep baking for another 40 minutes.
We take it out of the oven and let it cool on a rack.
