Carbonara Risotto in a GM Pot

Lightly fry the onion and bacon
Set the GM pot to the grill menu (or oven if you don’t have a grill). Add the olive oil and, when it’s hot, add the finely chopped onion. Sauté for 3-4 minutes until it’s transparent.
Add the bacon or pancetta and sauté a couple more minutes until it’s golden. -
Add the rice
Add the rice and stir well for 1-2 minutes so it absorbs the flavor of the sofrito.

Cooking the risotto
Pour in the hot broth (better if it's just been heated in the microwave or on the stove), close the lid, and set it to the stew menu, 130 °C, medium pressure, 8 minutes.
When it’s done, let it naturally release pressure or do it manually, carefully. -
Add the carbonara mix
While the rice is cooking, mix the egg yolks, cream (if you decide to use it), and grated cheese in a bowl.
Open the pot, gently stir the risotto, and add this mixture to the hot rice. The heat will cook it slightly and make it super creamy.
Adjust the salt if needed and add freshly ground black pepper to taste.
Nota
Serve it immediately, nice and hot, with a little extra Parmesan on top and a touch of pepper. You can garnish it with chopped fresh parsley if you want a green touch.
Extra tips
If you prefer a stronger flavor, you can use Pecorino cheese instead of Parmesan.
Do not wash the rice before cooking, as its starch is key to making it creamy.
You can adapt this recipe using mushrooms, peas, or even chicken if you want a personalized version.
